Japanese Home Cooking Workshop: Ganmodoki

This is our pilot (trial?) Japanese home-cooking workshop!

We thought: Why not introduce Japanese food?  ...the ones that are not well-known outside of Japan.  Of course, you can always search up the recipe online but wouldn't it be more fun to have someone show you how it's done? :-)  Besides, you might not be able to find all the authentic Japanese ingredients in Halifax.  Our big advantage: we know how it should taste like!  So we will suggest appropriate substitutes and still remain true to the spirit of the cuisine.

We will introduce "Ganmodoki" (がんもどき) in our first workshop.  

 
 

"Ganmodoki" can be loosely translated as "that which resembles goose".  Not a very appetizing name eh?  But it is quite yummy.  Ganmodoki is one kind of "shoujin-ryori" (精進料理), the food that Zen monks eat.  They do not eat meat and so they have this kind of food made from tofu and other non-meat ingredients.

In the Kansai region, this dish is also called "Hiryouzu" (飛龍頭)...literally translated as "flying dragon head"...but really, it is just the Japanese phonetic equivalent for the Portuguese snack called "filhós" -- a kind of fritter made from flour, eggs and, oftentimes, pumpkin.  In Portugal, they are a traditional Christmas dessert. 

They do look similar!


Our version of this dish brings together simple yet savoury ingredients including shrimp, bacon, green onions and mushroom, all in a tofu base. The tofu's neutral flavour helps tone down the intensities of each filling, while allowing their distinct flavours to come out and be appreciated. These patties are also highly versatile; you can customize your ganmodoki with the ingredients of your choice.  Once you master the base, make it your own and experiment with different ingredients. The possibilities are endless! 

Workshop Details

Cost: 12.50 + HST

Up to 4 participants only.  Pre-registration is required.
Participants are asked to bring with them a whisk, a spatula and an apron (optional).
We will prepare all the ingredients and other utensils.

Then, we taste our cooking together.  (We'll show you how to make the sauce that would go with it too!)

Origami-In-Motion Workshop

We are planning our first for 2016 origami workshop on Jan 24th,  Sunday.  In this workshop, we will make origami that go in motion.  One is a pinwheel that will spin when you blow on it and the other is a spinning top!

Thank you Hal-Con 2015

We had a great time at Hal-Con 2015.  We would like to thank everyone who visited our booth, including many fabulous cosplayers!  You kept us busy. We couldn't even take a break...and we love you for it! :-)

Our special thank-you to the organizers and volunteers.  You did one heck of a job. Everything was smooth.  100% successful event!

Afterglow Ikebana

Miyako and Susan worked long and hard to design this installation for the Afterglow Art Festival, held in Bridgewater, NS last Sep. 25~26, 2015.  The ever-evolving mock-up took over our garage for well over a month!

We thank Jim of Rofihe's Men's Wear (629 King St., Bridgewater, NS) for allowing use of the store's show window for the ikebana installation.  The location was perfect!

Have We Met Before?

We are all witness to the wild beauty that grows quietly along our roadsides and gets washed up upon the shore. What if we took that material inside? Susan Roberston is an Ikebana Enthusiast, Admirer, and Student and Miyako Ballesteros is a qualified Instructor Sogetsu School of Ikebana and Co-Owner of the Ikebana Shop in Halifax. Ikebana is an art in which the force of life in living plants and the spirit of the person arranging unite to create new beauty and form.

Summer Arts Program 2015

We have teamed up with some friends to offer the Summer Arts Program for children ages 8-10 years old at the Shambhala Centre!  It will be 5 days of fun, crafts and creativity.  Parents get to see a presentation on the final day.  Space is limited so please register as soon as you can!

Activities

Ikebana: the art of Japanese flower arranging,
based on 3 main elements: heaven, human & earth.

Gagaku: Ancient Japanese Court Dance and Music. We learn simple percussion on the drum, and its accompanying dance. The
movements are clear and open.

Calligraphy: disciplines of brushwork moving into open forms. We start with black ink and classical forms and move into color and free forms.

Origami: the art of Japanese paper folding. A great tool in developing spatial reasoning and geometric understanding, origami also teaches patience and concentration.

Etegami: means “picture letter.” It is a picture and a message. There are no rules Just draw and write what you feel in a moment of inspiration.

Bookmaking: each child creates a hand-made book

Teachers

Miyako Ballesteros is a qualified instructor in the Sogetsu School of ikebana. She owns the ikebana shop (6417 Quinpool Road, Halifax, NS). Miyako is passionate about sharing Japanese culture. Apart from ikebana lessons, she also conducts workshops in origami and etegami at different venues such as her shop studio, IWK, Dalhousie University, Halifax Public Libraries, etc.

Sarah Cox holds a Certificate in the Performing Arts in Dance from Naropa University. She is a long time student of Japanese Court Dance and also studies calligraphy and Japanese Tea Ceremony. She has taught children as well as adults for many years.

Jamie Pratt, Halifax representative of the Japanese Paper Place (Toronto), has long been fascinated by bookmaking arts. Through many workshops and studies she has learned various handmade book techniques and produced her own books.

March Break Pokémon Origami Workshop!
